Pina Colada Coolers | A Farewell to Summer

You guys, it’s August. The last month of summer, and although I’ve already spotted fall decorations and pumpkin spice items, I’m so not ready to say  farewell to summer. Most people plan a last hoorah or a family vacation for August, but we didn’t. So to keep the summer vibes going I plan to enjoy these pina colada coolers all month long, while pretending I’m somewhere tropical. Because as soon as someone says pina colada, my mind immediately transports to the Caribbean sea. Anyone else?  So, if you’re  not ready to let summer go either, make these coolers and we’ll do a virtual cheers to a never ending summer vacay vibes, ok?

My mom is a fan of rum so we always try to have a bottle of Bacardi Superior on hand for when she visits. Before you skim the ingredient list and think to yourself that you’re not going to “waste” these ingredients just to make this drink, I have two things to tell you. First, this drink is so delicious, and the rum is so smooth that you will inadvertently end up making this pina colada cooler for yourself and hopefully some friends all weekend long. It’s a perfect pool-side cocktail. Secondly, if by chance you have these ingredients left over, I plan to share a chicken pineapple recipe later this week that uses up all of these items—except the Bacardi. Not that this rum will last long in your house anyway.

Ingredients (makes 2 cocktails)

4 oz of Bacardi Superior Rum

6 oz of Pineapple juice

1 oz of Coconut Milk

Fresh pineapple for garnish. You can also sub the pineapple juice for actual pineapple chunks. Look below for how to carve the meat out of a pineapple to make a pineapple cup. You can use your carvings for the sub. Isn’t that so efficient?

Directions

Pour all of the ingredients into a blender. Fill with ice and blend. I like a little chunks of ice and fruit pieces in my pina, so don’t over blend. Then just pour and enjoy!

Want to really transport  yourself to a tropical island? Make a cup out of your pineapple! First, cut off the crown of the pineapple. Then, work with your knife to make an internal ring of the pineapple meat. Begin cutting sideways until you have removed the core and the surrounding meat. Then simply pour the cocktail into your pineapple.
