I switched up my breakfast routine from the avocado and runny egg on toast, (which I’ve probably eaten everyday for like a year), to a delicious acai breakfast bowl.

Well, maybe a fruity drink with an umbrella, but that’s not an appropriate breakfast option, unless of course you are on a tropical vacation. Trader Joe’s just released their very own Acai puree packets, and they’re unsweetened and organic. I’m excited. Are you excited? Trader Joe’s is around the corner for me, so a lot of what I make for dinner is also from there.
My mom just visited us for a couple of weeks, and I think I converted her to Trader Joe’s as well, I should really be making a commission.

ACAI BOWL RECIPE
Ingredients
- 1 acai puree packet
- 1/2 banana ( I reserve the other half to slice as a topping)
- 1 cup of frozen or fresh berries of your choice
- 1 heaping tablespoon of peanut butter
- 1/2 cup of almond milk, coconut milk or any liquid of your choice!
Toppings
- 1/2 cup of granola
- 1 tablespoon of coconut flakes (if you want)
- handful of fresh berries
- 1/2 of banana
- teaspoon of honey or agave

Directions
I use my ninja to quickly blend all of the ingredients together, you could use a food processor or a blender. But if you’re in the market for a new one, I can’t recommend the ninja highly enough—I use it for everything, on the daily!
This recipe makes for two bowls. Pour the pureed mixture into two bowls and then add the toppings. You can change toppings, include chia seeds or flax seed, or anything else you like.
