  • edamame (precooked section of Trader Joe’s)
  • english cucumber
  • avocado

For the Salmon Glaze Sauce

  • soy sauce
  • garlic
  • agave or honey
  • coriander seasoning*
  • lemon
  • seaweed snack

For Cucumber Salad

  • soy sauce
  • garlic
  • rice vinegar
  • agave or honey
  • sesame seeds
  • red pepper flakes *
  • red onion*

How to Make Agave and Soy Sauce Glazed Salmon Bowls

For some reason my kids won’t really eat salmon, unless I serve it cubed. So of course this is how I’ve been serving salmon almost weekly and usually on Mondays. With these easy additions from Trader Joe’s like the ready made rice and edamame, all I have to do is cook the salmon, quickly marinade the cucumber and assemble the bowls.

I like to start by making a quick soy and agave marinade and pouring it over the cubed salmon. I try to wait 10-15 minutes before cooking it.

In another bowl, I mix the ingredients for the cucumber salad. Sometimes I like to add thin slices of red onion and also red pepper flakes for an added spice.

We also love to eat these bowls with seaweed snacks. In fact, my kids call this quick salmon dinner “sushi” because they like to add bites of salmon, edamame, cucumber and avocado with rice into the seaweed for a bite of full flavor. Hope you try it. Here is the full recipe and step by step.

Soy Glazed Salmon Rice Bowls

Trader Joe's staples help create this flavorful, colorful and delicious dinner in just 30 minutes with delicious agave and soy sauce marinade for the salmon.

Ingredients
  

Salmon Marinade

  • 1 garlic clove, minced
  • 1/4 cup soy sauce or coconut aminos
  • 1 tbs agave nectar
  • 1 tsp ground coriander
  • 1/2 lemon, juiced

Cucumber Salad

  • 1 garlic clove, minced
  • 1 tsp agave or honey
  • 1 tsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp olive oil
  • 1 tsp red pepper flakes (optional)
  • 1/2 red onion (optional)
  • 1/2 lemon, juiced
  • 1/4 cup sesame seeds

Instructions
 

  • Prepare the salmon marinade and mix all ingredients together in a bowl.
  • Add cubed salmon to the bowl and allow to marinade for 15-20 minutes.
  • Meanwhile prepare other ingredients. Slice cucumber and red onion if using.
  • Mix the cucumber salad marinade ingredients. Add cucumber and allow the mixture to marinade.
  • Place salmon to cook for 15-20 minutes at 350
  • Prepare rice according to package instructions.
  • Prepare edamame according to package instructions.
  • To assemble the bowls, start with rice, top with salmon and pour any remaining glaze over the fish. Add cucumber salad, edamame and sliced avocado to the bowl. Sprinkle with sesame seeds or furikake.
  • Eat with sides of seaweed snack.
