If you follow my very unglamorous every day life via my Instagram stories, then you’ve probably seen me standing at my kitchen with my lunch. Cooking for one can seem like a giant waste of time, and on some days I do fall victim to thinking, “heck it’s only me“, so I’ll just scrounge up leftovers from the fridge. But, in retrospect, I know that I feel so much better when I take a few minutes to prep for my lunch party of one.
I’m also a firm believer that we eat with our eyes first, that’s why I try to make my meals not only healthy but look tasty, too! In particularly, I love making a veggie rainbow bowl. A delicious bowl of healthy medley of veggies, a perfect lunch for one.
But, let’s be honest. A salad without protein, no matter how pretty isn’t always filling. Veggie Rainbow Bowl Topped with MorningStar® Meat Lovers Burger Recipe
I love the idea of eating the rainbow, maybe for aesthetic reasons, but also because all that color is actually good for us! So, round up all the various color fruit and veggies you have and make yourself a bowl. Lately I’ve been on a olives and feta cheese kick, so I added those to the bowl, as well as some blueberrries. Eating should be fun, right?
Typically I use a medley of greens as my base, and sometimes I throw in a tablespoon of guinoa, if I have some cooked.
Tthat’s if I #mealprepped that week. Also a good reason to have the MorningStar® meat lovers burger in your freezer, for emergency lunches, it’s ready in just 10 minutes or so on the grill. If Mauricio is having lunch with me, we typically grill these outside. Totally worth making room on the grill for 27 grams of vegan protein!
The star of this rainbow bowl is my little DIY dressing, Which is super simple:
1 heaping tablespoon of olive oil
1/2 table spoon of balsamic vinegar
salt & pepper to taste
a few hot pepper flakes
juice of 1/2 a lemon
Whisk together and you have the most delicious and pretty healthy dressing for your veggie bowl!
