How to Make Quick Spicy Shrimp Noodles

To make these pad thai noodles with spicy shrimp, first peel and devein the shrimp. If you’re not sure how to properly clean your seafood check out this post for a step by step.

Meanwhile, prepare your noodles according to instructions by boiling them in hot water. Rice noodles cook faster than regular noodles, so pay attention so that your noodles are still firm to cook with later.

Next, pour one tablespoon of canola oil in a cast iron skillet and cook your shrimp for about 2-3 minutes on each side. Then set aside. Note, for this recipe I like to take the tails off the shrimp.

In the same cast iron skillet, add the remaining oil and quickly cook the green onion until it’s bright green. Set aside. Pour one egg and quickly scramble it in your skillet.

Then, mix all of the peanut butter ingredients together in a separate bowl. Add noodles, shrimp, scallions and top with the peanut butter mixture.

To serve top with cilantro, peanuts and a squeeze of fresh lime.
