Mexican Street Style Corn Salad
This spicy and refreshing Mexican Street Style Corn Salad Recipe skips the mayo but not the flavor with canned or frozen corn for a quick and delicious side dish
- 1 bag of frozen or canned corn
- 1 garlic, chopped
- 1 jalapeno, chopped
- 1/3 cup red onion, chopped
- 1/3 cup fresh cilantro, chopped
- 1/2 cup fresh lime juice
- 1/2 tsp chilli powder
- 1/2 tbsp olive oil
- 3 pz Cotija cheese
- salt and pepper to taste
Defrost or open and drain your can of corn.
Chop all of the ingredients. Toss together. Add corn
Drizzle with olive oil and cotija cheese
Toss salad gently and serve with extra lime on the size.
