Mexican Street Style Corn Salad

This spicy and refreshing Mexican Street Style Corn Salad Recipe skips the mayo but not the flavor with canned or frozen corn for a quick and delicious side dish

Ingredients
  

  • 1 bag of frozen or canned corn
  • 1 garlic, chopped
  • 1 jalapeno, chopped
  • 1/3 cup red onion, chopped
  • 1/3 cup fresh cilantro, chopped
  • 1/2 cup fresh lime juice
  • 1/2 tsp chilli powder
  • 1/2 tbsp olive oil
  • 3 pz Cotija cheese
  • salt and pepper to taste

Instructions
 

  • Defrost or open and drain your can of corn.
  • Chop all of the ingredients. Toss together. Add corn
  • Drizzle with olive oil and cotija cheese
  • Toss salad gently and serve with extra lime on the size.
