Cook noodles according to package directions.
Heat 1 tablespoon of oil in a cast-iron skillet over high. Add shrimp and cook for 2 minutes on each side or until the shrimp is pink. Set shrimp aside.
Back to the skillet, add another tbsp of oil and heat up the scallions until they are bright green. A few minutes. Set aside.
Add the remaining oil to the skillet and quickly scramble the egg.
Now make the sauce by mixing all of the ingredients together in a bowl. Don't forget to reserve a little water from the noodles.
Add shrimp, scallions and the noodles back to the skillet. Pour your sauce and toss everything gently, top with half of the peanuts and cilantro.
To serve, add more peanuts, cilantro and a squeeze of lime. Enjoy!
