Easy Ground Turkey Skillet Enchilada Recipe

easy ground turkey recipe you can make in one skillet with delicious toppings for a quick enchilada inspired meal everyone can make their own.

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb organic ground turkey 
  • 1 yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 1/2 cup enchilada sauce
  • salt and freshly ground black pepper, to taste

Toppings

  • 1 cup shredded cheese
  • 1 avocado, halved, seeded, peeled and diced
  • 1 cup tortilla chips
  • 2 tbsp chopped fresh cilantro leaves
  • 1 tbsp chopped green onion
  • 2-3 tbsp sour cream
  • 2-3 tbsp salsa (Medium or Mild)

Instructions
 

  • Pour olive oil in a pan and add onion. Sauté until the onion is translucent (2 to 3 minutes). Add salt and pepper and garlic and cook for a few more minutes. 
  • Add ground turkey and mix the onion and garlic into the ground meat. Cook until the turkey is browned. Add salt and pepper to taste.
  • Add enchilada sauce and continue to cook until the turkey meat has absorbed most of the sauce.
  • Take the pan off the heat. Layer the skillet with tortilla chips and top with shredded cheese.
  • Place skillet in the broiler for 4-5 minutes or until the cheese has melted and the tortilla chips are crispy. Watch your broiler so the cheese and the tortilla chips won't burn.
  • Take the enchilada skillet out of the oven and add favorite toppings. Avocado, sour cream, salsa, cilantro and green onion. Serve immediately with additional tortilla chips on the side.
