Pineapple Fried Rice Recipe with Cauliflower Rice

easy pineapple shrimp fried “rice” packed with delicious flavors. Best of all this dish comes together in about 20 minutes.

Ingredients
  

  • 16 oz frozen shrimp or 20 shrimp defrosted
  • 1 Trader Joe's cauliflower stir fry
  • 1 pineapple
  • 1 garlic clove, minced
  • 2 tbsp soy sauce
  • 2 tsp sesame oil
  • 1 tsp oyster sauce

If using plain rice you will also need the following*

  • 2 cups prepared rice or cauliflower rice, cold
  • 1/2 onion, chopped
  • 1/2 cup peas
  • 1/2 cup corn

Instructions
 

  • Heat one tablespoon of olive oil in a pan and carefully add your shrimp. Turn the shrimp once they are pink, about 3-5 minutes on each side. Set your shrimp aside.
  • Return to your pan, and cook the stir fry according to the directions on the Trader Joe's package.
  • f you are using plain rice or cauliflower rice, first sauté the veggies of your choice and garlic until they are soft and cooked through. Then add the cold rice  and stir to combine.
  • Return to your shrimp, take off the tails and chop into small chunks. Add the shrimp to the rice mixture.
  • Once the rice has cooked through add the soy sauce and the oyster sauce and the pineapple chunks.
  • Continue to cook, stirring gently for another 10 minutes or so.
  • Remove the rice from the heat. Taste and add more soy sauce, sesame oil if required.

Notes

  1. You can leave out the oyster sauce and your fried rice will still be great.
  2. You can skip the pineapple bowls if you like and use frozen pineapple chunks or buy pre-cut pineapple to save on time. But, if you're going for the tropical dinner theme the pineapple bowls make for a fun touch.
  3. Use cold rice. Leftover refrigerated rice is great, so is frozen cauliflower rice. If using fresh, warm rice the stir fry will be soggy.
