Heat 1 tablespoon of olive oil in a large skillet over medium-high heat, use a skillet that has a lid. Add sausage links, brown on all sides, 3-5 minutes. Then remove from the pan and set aside.
Add another tablespoon of olive oil and add the potatoes. Cook for 5-10 minutes until potatoes are golden brown. Then remove the potatoes.
And final tablespoon of olive oil and sauté the onions, garlic and peppers until translucent. Salt & Pepper the mixture.
Add the potatoes and sausage back to the skillet.
Pour 1/3 cup of water over the mixture and close the lid.
Let everything cook for another 10-15 minutes, until the water is absorbed, the potatoes are tender and the sausage is cooked through. Sprinkle in the dill and taste to see if more salt & pepper is needed.
Turn off the heat, add fresh arugula to your serving bowl, add the sausage and potatoes mixture, toss gently and enjoy.
