Zucchini and Turkey Patties

These baked turkey patties with zucchini are about to become your weekly easy dinner or lunch go-to. Serve them up with a big salad or your favorite grain or pasta.
Ingredients Method

Ingredients
  

  • 1 lb 1lbs  ground turkey
  • 2 zucchini, shredded
  • 1 medium yellow onion, minced
  • 2 garlic clove, minced
  • salt & pepper to taste
  • 1/2 tsp dried oregano
  • 1/2 tsp cayenne powder
Glaze for Turkey
  • 1/2 tbsp Ketchup
  • 1/4 tsp honey or agave
  • 1/4 tsp hot sauce
Avocado Cilantro Dressing
  • 1 avocado
  • 1/4 cup cilantro, chopped
  • 2 garlic clove, chopped
  • 1/4 cup low fat sour cream or greek yogurt
  • 1 tbsp fresh lemon juice
  • 3 tbsp olive oil
  • salt & pepper to taste

Method
 

  1. Combine all the ingredients for the turkey patties in a large bowl and mix until just combined
  2. Create patties and place on a well oiled baking sheet.
  3. Cook at 375 degrees for 20 minutes
  4. Pull patties out of the oven and glaze them.
  5. Place patties back in the oven to broil for 2-3 minutes
To make the Cilantro Avocado dressing
  1. Place all the ingredients In a food processor or blender.
  2. Optional: thin the salad dressing out with water until it reaches a desired consistency.
  3. Keep airtight container 2-3 days.
