Mini Turkey Meatloaf with Green Beans | Easy One Pan Dinner Recipe

Ingredients
  

  • 1 lb lean ground turkey
  • 1/3 cup bread crumbs
  • 1 egg
  • 1 onion, minced
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 1/4 cup fresh basil, finely chopped
  • 1/4 cup grated parmesan cheese
  • 1 lb green beans
  • salt & pepper to taste

For the Glaze

  • 1/2 tbsp soy sauce
  • 1 tbsp ketchup 
  • 1/2 tsp brown sugar
  • 1/4 tsp Sriracha

Instructions
 

  • Preheat oven to 375 and coat a large baking sheet with cooking spray or use wax paper to line the pan.
  • Combine turkey, bread crumbs, egg, onion, basil, oregano, grated parmesan, garlic and salt and pepper and mix together.
  • Make petite loaves out of the mixture and gently place them on the sheet pan
  • Place the mini turkey loaves in the oven for 12 minutes.
  • Meanwhile, toss the green beans in olive oil, garlic, and salt and pepper. Also make the glaze.
  • Take out the loaves from the oven and gently brush the loaves with the glaze.
  • Add green beans to the sheet pan. Place back in the oven and continue to cook for another 15 minutes. Meatloaves are done once they are no longer pink in the center ( 15 minutes or so).
  • Take out of the oven, and enjoy.
