Preheat oven to 375 and line a large baking tray with parchment paper. Lightly spray with cooking spray.
Add olive oil and sauté onion and garlic until translucent. Add ground turkey, garlic powder, cumin and cook until the meat is cooked through. Add tomato sauce and cook for about 5 more minutes, or until the sauce is almost absorbed. Remove from heat.
Line the mini sweet peppers on your baking tray, cut side up.
Add the ground turkey mixture to each mini sweet pepper. Top with shredded cheese.
Bake for 8-10 minutes, until the cheese has melted.
Remove from the oven. Top with your favorite nacho toppings, such as black olives, cherry tomatoes, drizzle of sour cream, diced avocado and cilantro. Serve immediately.
