Low Carb Turkey Meatloaf Recipe

This super easy turkey meatloaf recipe is the best weeknight meal you don’t have to fuss over. Always moist, never dry and with a little egg surprise in the middle, makes this turkey meatloaf recipe a weeknight stand out.

  • 1 lb ground turkey
  • 1 egg
  • 1 onion, chopped
  • 3 garlic cloves, chopped
  • 3/4 cup cup grated Parmiagano-Reggiano
  • 3/4 cup Italian seasoned breadcrumbs
  • Salt and pepper to taste

Ingredients for the sauce

  • 3/4 cup ketchup

  • 2 tbsp Worcestershire sauce
  • 1 tbsp sugar
  • 1 tbsp honey

Method
 

  1. Finely chop the onion and three cloves of garlic. I also like to add whatever herbs I have at the time. Here I chopped basil, thyme, cilantro and parsley. 
  2. Combine the onion, garlic, herbs, Parmiagano-Reggiano, and breadcrumbs together. Season the mixture with salt and pepper to taste.
  3. In another bowl, combine ketchup, Worcestershire sauce, honey and sugar.
  4. Spray or grease your loaf pan and place your turkey mixture into a loaf pan.
  5. If you are adding eggs, place a small amount of the turkey mixture into the pan. Layer the hard-boiled eggs, then cover them with the remaining turkey mixture.
  6. Spread the sauce over the top of the mixture. Cook covered for 35-40 minutes at 375 degrees. Then uncover and cook for another 10 minutes.
