And, by skipping the chips and opting for these mini peppers instead, you get a delicious plate of nachos with a much healthier twist.

I made these on a Saturday afternoon as a trial run for my taste taster. And it was a slow hit. When you present guys with a healthier version of their most beloved foods, it can be a hard sell. These are not “nachos,” in the same way a veggie burger is not a burger or zoodles are not really pasta.
But, even if they don’t quite replace the real thing, it doesn’t mean these are not a great and healthier alternative. The mini peppers bring an additional flavor and I’m also a big fan of the crunch.

The best part for me though is there isn’t that heaviness after consuming a carb loaded dish. Nachos sound great in theory, but as we get older it feels better to make these healthier versions of our favorites. Because at the end of the day, you simply feel better after eating these.
But, let me assure you, you don’t have to wait for the football season to make these. These mini sweet pepper loaded turkey nachos make for a great weeknight dinner, especially if you’re looking for a lighter and healthier alternative food options. They’re also fun to make as a mid-day weekend snack, or a Friday happy hour appetizer.

Loaded Turkey Nachos on Sweet Mini Peppers

Ingredients

  • 1 lb lean ground turkey
  • 1/4 cup tomato sauce
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1/2 onion, minced
  • 1 tbsp fresh cilantro
  • 1/2 tsp garlic powder
  • 1 tsp cumin powder
  • 15-20 mini sweet peppers, halved, washed and seeded
  • 1 cup shredded light cheese
  • 1 tbsp  light sour cream
  • 1 avocado, diced
  • 1/4 cup olives, halved
  • 1/4 cup cherry tomatoes, halved
  • salt & pepper to taste

Directions

  1. Preheat oven to 375  and line a large baking tray with parchment paper. Lightly spray with cooking spray.
  2. Add olive oil and sauté onion and garlic until translucent. Add ground turkey, garlic powder, cumin and cook until the meat is cooked through. Add tomato sauce and cook for about 5 more minutes, or until the sauce is almost absorbed. Remove from heat.
  3. Line the mini sweet peppers on your baking tray, cut side up.
  4. Add the ground turkey mixture to each mini sweet pepper. Top with shredded cheese.
  5. Bake for 8-10 minutes, until the cheese has melted.
  6. Remove from the oven. Top with your favorite nacho toppings, such as black olives, cherry tomatoes, drizzle of sour cream, diced avocado and cilantro. Serve immediately.
