If you’ve been following my blog for a while, you know that I’m forever trying to beat the 3pm slump. My body has come to expect some sort of jolt back to reality with a quick fix of caffeine. On most days, I settle for microwaved coffee.

On other days, I make a delicious matcha latte,  but lately I’ve been making matcha energy balls, and let me tell you these little bites not only help me feel energized, they also pack a pretty powerful nutritional punch. Killing two birds with one stone with something delicious and satisfying.

The dates make these bites sweet, while not overpowering the matcha flavor. If you’re looking for something yummy and on the go, make these delicious matcha energy balls, and keep them in the fridge for when the slump hour strikes.

How to Make Protein Energy Balls with Matcha

Add dates, peanut butter, chia and flaxseed mix, coconut oil and 2 tbsp matcha powder in a food processor. Blend until the mixture is combines together. Take out the blade. Then gather small bites of the “batter” by hand and roll into a ball.

If the mixture falls apart, refrigerate for 15 minutes and try again. Add another tablespoon of matcha powder into a bowl and roll each bite in the powder.

Top with extra coconut shavings. Eat immediately or store in the fridge to enjoy later!

Matcha Green Tea Energy Bites

No bake, delicious and nutritious energy bites recipe for a make ahead snack with green tea matcha!

Ingredients
  

  • 6 pitted dates
  • 1/2 cup peanut or almond butter
  • 1/4 cup chia seeds
  • 1 tbsp coconut oil
  • 2 tbsp matcha green tea powder
  • 1/4 cup finely shredded coconut flakes

Instructions
 

  • Add dates, peanut butter, chia seed, coconut oil
    and 2 tablespoons of green tea powder to a food processor.
    Mix until the mixture is relatively blended. Take out the blade. Then gather small bites of "batter" by hand and roll into a ball.
    If the mixture falls apart, refrigerate for 15 minutes and try again.
    Roll the bites in a mix of green tea matcha powder and coconut flakes to finish. Eat immediately or store in the fridge to enjoy later!
